OUR PROJECT


Hacienda Villarta is the name of a winery, located near the Alberche River in Escalona (Toledo), only 84 km from Madrid. The winery, with its wide elaboration premises, rises in the middle of our 378 acres property, cultivated with vineyards and olives trees. Inside the winery there are bright and cozy hospitality rooms, a wine shop, a tasting area, a restaurant and multifunctional spaces.

HOW WE MAKE WINE


The weather of our region, with its cool night breezes, warm daylight, long cold winters, irregular raining periods, strong temperature variations, offers us the perfect conditions to grow excellent vineyards. Moreover, the low output of our vineyards guarantees grapes with a high concentration of poliphenols, necessary to excellent wine quality.

In our wide elaboration hall there are stainless steel containers with a capacity of 500 hectolitres, filtration equipments and a temperature control system.

In our winery wines ripe in nearly 3.000 american And french oak barrels, constantly rotated with a apecial mechanical system patented by Villarta. The wine-making process is run with the most advanced technical means, by qualified dtaff who provide their experience to produce natural wines of outstanding quality.

Some of the facts to get the most from the vineyard are the region's environment, advanced equipment and a natural production process from the hardest to the bottling.

American and French oak barrels. These barrels are located in a naturally controlled temperature room, in accordance with the elaboration process of our wines. With the ageing, a complex wine is obtained, with a blend of the grape and oak wood aromas.

Designation of Origin.- Méntrida.

 

Bigarreau cherry coloured wine, shiny,v cleverly dyed teardrop, finely sketched. Strong, fleshy and extract. fruit zest, impressions of coffee and spices, with a slight bitter end. Slow pace, pleasant and persistent.

In the most direct search of a relation between in consumer and the places wherefrom the grapes come, we have decided to bottle the wine with scanty treatments of stabilization, leaving it almost as a wine in branch. This can facilitate the appearance of precipitates during the upbringing in bottle.

Red cherry coloured, persistent teardrop, wide and fleshy. Smooth pace, balanced and great fruit intensity, leaving an impression of long-lasting strenght and quality. Gets along pretty well with stronger foods like spicy or marinated, however it’s enjoyable with strew and barbecue.

In order to elaborate this wine, a previous selection among different fertile places in our vineyard was made throughout the years, selecting those that evidently have given the best grapes. The harvest was performed before the dawn; therefore, a chill weather was reached during the grape entry to the wine cellar, making easier the successive prefermentative maceration that lasted two days.

We are able to orient from the beginning of production the type of wine that we pursue since we have our own vineyard. Advanced technology in elaboration is a strength added, which allows to keep the wines in the right parameters according to their category. 

In Hacienda Villarta it is a custom to macerate with the peel. This way, the extraction of poliphenols is appropriate and these are perceived pleasantly in the glass.

Fermentation takes place in stainless steel tanks, which provide a good hygene level and the ideal temperature (77ºF) to avoid unexpected abruptness in any step of the elaboration.


Ageing process lasts 3 months in our American and French oak barrels. These barrels are located in a naturally controlled temperature room, in accordance with the elaboration process of our wines. With the ageing, a complex wine is obtained, with a blend of the grape and oak wood aromas.

This is a bigareau cherry coloured wine, clean, shiny, and deeply layered. It’s smooth, well structured, with vatietal aromas of forest fruits and spices, with a bitter end. Long paced, enjoyable and persistent.

Elaboration is oriented to produce an original white wine, using French varieties in the dry and hot summers of Toledo, blended with a traditional white grape like Airén. Keeping the characteristics of these wines, we find a greater complexity when tasting them.

It’s colour is intense yellow with greenish and gold tonalities. Shiny and transparent. The aroma reminds the varieties of wine’s source, highlighting pineapple and banana with a slight variation of ripe fruit.

The harvest was performed before the dawn (making the most of the lowest temperature of the day) to protect grapes from oxidation. Once in the wine cellar, the must and the peel are macerated to obtain the first aromatic notes.

Fermentation at controlled temperature (60º F) allows to maintain the generated aromas and the elegance this kind of wine should posses. The fermentation process suffers a slowdown because the low temperature, and it could last a month.

This makes the elaboration process more difficult than usual, therefore, to obtain the desired result, more caring steps must be taken. Finally looking to obtain a more interesting young wine, a delicate essence of pastry aromas are noticed in result of it’s slight exchange with oak in barrel.

Intense yellow colour, product of a long maceration, with greenish and gold tonalities. Shiny and transparent. Clean bouquet that reminds the varieties of wine’s source with intense and frutal-floral tones of pineapple, apple, and banana.

Nice persistence in glass.

Intense and slightly sharp in mouth, smoothened by its greasiness and volume. Mild pace, very pleasant, with no other noticeable factor except a enjoyable bitterness that makes its pace longer.
